10 Pound Bag of Carrots

What do you do when a 10 pound bag of carrots is on sale for $2?

It took all my strength to fight the urge to buy 2 bags.  One bag is enough for a family who will only eat the pre-peeled mini carrots.

I made a huge pot of carrot soup and have been enjoying it every day for lunch at work.  5 days so far, and I have enough to last me two more days.

I keep wondering if my skin is going to get lovely orange beta-carotene glow.  I guess then I could dress as a carrot for Halloween and not have to wear any make-up.

  1. I don't have a favouite carrot soup recipe. I am wondering what you did for spices. I imagine some onion was in the soup.

    Did you really use the whole ten pounds for soup?

    Sometimes I switch out half onions for sweet potatoes when I am making the peanut butter soup. But I confess to thinking that is cheating a bit.

    I often fill up my 4-compartment vegetable tray with carrots. I think I get more sweetness from those carrots than from the mini-carrots -- I guess I will just say it -- I am always conflicted with the slimy feeling of those when the mini ones aren't absolutely used in the first couple of days. But I think I am the only one who feels that way.

    Guess I will go out and look at carrot soup recipes, just in case I find a bag at $2 for 10 pounds as well, Mary.

  2. I guess I answered my own question about the spicing in the carrot soup, Mary. I found a Morrocan Soup recipe that looked delicious. And just a simple carrot soup recipe that raised the ante with garlic, onion, broth some thyme and a couple of other spices.

    Yum to the soup. I see why a person might be able to eat it 5 days in a row.

    How is biking in Ottawa? Given it up yet? It was a beatiful 15 degrees here today, so my half hour walk was a joy.

  3. I think my soup was just onions (I caramelized them), carrots and I think a tiny bit of ground cloves. Then pureed.

  4. Mmm to the cloves. That is the secret ingredient in black bean soup. Shhh! Don't tell anyone.

  5. Now I am wondering if it was cloves or nutmeg? I think nutmeg, but will try cloves in black bean soup next time I make it. Which might be never, since I don't think I have ever made it. :-)
